Ingredients
1. Spinach leaves (palak) fresh 2 bunches
2. Paneer (cottage cheese) 250 grams
3. Green chillies 1-2
4. Oil 1 tablespoon
5. Cumin seeds 1/2 teaspoons
6. Garlic chopped 1 tablespoon
7. Salt to taste
8. Lemon juice a few drops
9. Fresh cream 1 tablespoon + for drizzling
How to cook ?
Step 1 : Blanch spinach leaves in sufficient water for 30-40 seconds. Remove from heat and refresh in ice cold water.
Step 2 : Squeeze out the excess water and grind into a fine puree with green chillies.
Step 3 : Heat oil in a non-stick pan. Add cumin seeds and sauté till it changes colour.
Step 4 : Add garlic, mix and sauté well. Add prepared spinach puree and little water and mix well.
Step 5 : Cut cottage cheese into large cubes.
Step 6 : Add salt, lemon juice and cottage cheese cubes, mix lightly and cook for 2-3 minutes.
Step 7 : Add cream and mix well. Switch off heat.
Step 8 : Drizzle cream on top and serve hot.
