Ingredients
1. Red capsicum cut into thin strips 1 medium
2. Yellow capsicum cut into thin strips 1 medium
3. Green capsicum cut into thin strips 1 medium
4. Zucchini sliced ½ cup
5. Yellow squash sliced ½ cup
6. Broccoli florets ½ cup
7. Oil 2 tablespoons
8. Garlic chopped 1 tablespoon
9. Chipotle sauce 2 tablespoons
10. Salt to taste
11. Black pepper powder to taste
12. Jalapenos sliced 2 tablespoons
13. Onion sliced ¼ cup
14. Coriander leaves chopped 2 tablespoons
How to cook ?
Step 1: Heat oil in a non-stick pan, add garlic, chipotle in adobo sauce, salt and pepper powder and sauté for 1 minute.
Step 2: Add jalapenos, onion, capsicums, zucchini and yellow squash and sauté lightly.
Step 3: Add broccoli and coriander leaves and toss to mix.
Step 4: Serve hot
