Bourbon Chicken

Ingredients
1. Boneless chicken thigh 200 grams
2. Soy sauce 3 teaspoons
3. brown sugar/jaggery 2 teaspoons
4. Garlic chopped 1½ teaspoons
5. Ginger chopped 1 teaspoon
6. Crushed black peppercorns to taste
7. Salt to taste
8. Red bird?s-eye chillies 1½
9. Onion 1
10. Vinegar 1½ teaspoons
11. Chicken stock 2 cups
12. Rice soaked and drained 1 cup
13. bourbon whiskey 3 tablespoons

How to cook ?
Step 1 : Take chicken thigh on a plate. Add soy sauce, brown sugar, 1 teaspoon chopped garlic, ginger, crushed peppercorns and salt.
Step 2 : Finely chop 1 chilli and add alongwith oil, finely chopped spring onion bulb, bourbon and vinegar. Rub well all over and marinate for overnight.
Step 3 : Heat stock with little salt in a deep non-stick pan and bring to a boil.
Step 4 : Heat some oil in a non-stick grill pan. Place chicken alongwith the marinade and grill on medium heat till evenly done from both sides.
Step 5 : Add rice to the stock alongwith salt and remaining garlic and cook till the rice is fully done. Drain the rice in a colander.
Step 6 : Transfer the rice onto a serving plate. Place grilled chicken along, garnish with chopped spring onion greens and remaining chopped chilli.
Step 7 : Serve immediately.
