Ingredients
1. Spinach bunch 1 large
2. Mutton on bone, cut into 2 inch pieces 750 grams
3. Oil 3 tablespoons
4. Black cardamom 1
5. Cinnamon 1 inch
6. Green cardamoms 4-5
7. Onions finely chopped 2 medium
8. Garlic cloves 6-7
9. Green chillies 2-3
10. Ginger 1 inch
11. Coriander powder 1 tablespoon
12. Cumin powder 1 teaspoon
13. Tomatoes chopped 2 medium
14. Salt to taste
15. Tomato puree ½ cup
16. Butter 1 tablespoon
17. Yogurt 3-4 tablespoons
How to cook ?
Step 1 : Heat oil in a pressure cooker. Add black cardamom, cinnamon and green cardamoms and sauté till fragrant. Add onions and sauté till golden.
Step 2 : Grind together garlic, green chillies and ginger to a fine paste.
Step 3 : Add the ground paste to the pressure cooker, mix and sauté for 30 seconds. Add coriander powder and cumin powder and mix well.
Step 4 : Add tomatoes and salt, mix well and cook till tomatoes turn pulpy. Add mutton, mix and cook on high heat for 2-3 minutes.
Step 5 : Roughly chop spinach leaves.
Step 6 : Add tomato puree to the mutton, mix and cook for a minute. Add spinach, mix and cook for a minute. Add butter, mix well and cook for a minute. Add yogurt, mix well, cover and pressure cook till 3 whistles are given out.
Step 7 : Serve hot.
