Egg Curry

Ingredients
1. Eggs hardboiled 6
2. Tomatoes fresh 1/2 cup
3. Dried red chillies 2-3
4. Onion finely chopped 1 medium
5. Garlic cloves 2-3
6. Black peppercorns 2-3
7. Coriander seeds 1 teaspoon
8. Cumin seeds 1/2 teaspoon
9. Turmeric powder 1/2 teaspoon
10. Tamarind pulp 3/4 teaspoon
12. Oil 1 tablespoon
13. Salt to taste

How to cook ?
Step 1 : Grind together coconut, dried red chillies, half the onion, garlic, peppercorns, coriander seeds, cumin seeds, turmeric powder and tamarind pulp alongwith some water to a fine paste.
Step 2 : Heat oil in a non-stick pan. Add remaining onion, mix and sauté till golden.
Step 3 : Make a crisscross on the narrow side of the eggs.
Step 4 : Add the prepared paste to the pan, mix and cook for a minute. Add 1 cup water and mix well. Add salt, mix and cook on low heat for 2-3 minutes.Add eggs, mix and cook for 4-5 minutes.
Step 5 : Serve hot garnished with a coriander sprig.
